I saw screenshots described as U.S. patents about using electromagnetic signals to affect the nervous system. What can a patent document really tell us about whether the claimed method works?
Do these patents actually show that voice-to-skull technology works?

A patent describes claims someone sought legal protection for. A grant is not an independent test showing the method works as described, so screenshots alone do not settle that question. First verify the document and read its actual claims, rather than relying on a dramatic summary.

I’d separate two questions: what the document proposes, and what evidence supports the effect. For the second, look for clear measurements, controlled tests, and independent replication. Mentions of radiofrequency or the nervous system do not, by themselves, demonstrate remote delivery of speech or thoughts.
